"Just Chicken" - Chicken Pot Pie

Chicken Pot Pie Ingredients:

3-4 lb chicken, diced into sections or pieces

Homemade Cookies Recipe

Pie dough (recipe below)

1/4 cup butter

Pepper and salt

1 cup of whole milk (do not use non-fat milk)

4 cups of chicken stock

8" baking dish or pie pan

Directions:

Preheat your oven to 400 degrees. Place the pieces of chicken in a large pot and add just enough water to cover the top of the chicken. Bring to a boil and then lower the heat to medium-low and slowly boil until the meat is falling apart. While the meat cooks, you can prepare the pie dough and grease the baking dish.

Slice the dough in half and then roll out one half to around 1/8 inch thick. Carefully put the rolled out dough in the bottom of the pan. If there is any over-hanging pie dough, cut it from the edges of the pan and set aside.

Place shredded chicken in the dish and the remaining dough. If possible, layer the chicken and the leftover pie dough. Pour in the milk and evenly distribute with two tbsp of the butter. Sprinkle with pepper and salt to taste.

Next, take the other half of the pie dough and roll into a long 1/4 inch thick rectangle. Dice the remaining two tablespoons of butter into tiny pats and dot along the dough. Fold the pie dough into thirds and roll out. Repeat once more. This will ensure that the butter is blended into the dough. Roll out into a thin circle and cover the top half of the pie. Squeeze the edges together and then slice a hole in the top to allow hot air to escape.

Bake the chicken pot pie in the oven for 35-45 min until the juices bubble and the crust is golden brown.

Pie Dough Ingredients:

2 cups flour
1 tsp salt
1 cup butter, diced into small pieces or shortening
3/4 cup of ice water

Directions:

In a large mixing bowl, mix the flour and salt and then work the butter lightly into the flour using either two forks or a pastry blender. When the flour mixture looks like coarse meal, slowly add the ice water and combine just until the dough can hold together. Don't over mix, or else the dough will get "gummy". Wrap in plastic wrap and chill in the fridge for 60 minutes in order to "rest".

Trail Mix Cookie Jar

When I was a kid we always had a cookie jar on the counter, and yes, it was always filled with cookies. Sometimes homemade and sometimes store bought. At my house we have a cookie jar on the table, but it is not filled with cookies. It is filled with trail mix.

With my oldest child growing in size and appetite, a husband with a late night sweet tooth and me always looking for a way to eat without feeling full while pregnant, I was always getting creative with snacks and fresh produce in the kitchen. One day I realized I was keeping our great trail mix hidden away in the pantry where we'd forget about it until I had this idea:

Homemade Cookies Recipe

Enter in the Trail Mix Cookie Jar.

Each time I go grocery shopping, I give my almost seven year old daughter the task and total freedom of finding these items:

-2 nut varieties
-2 seed varieties
-2 dried fruit varieties

When you get home, pour the contents into a clean and clear jar with a 1/4 measuring cup for scooping and place on the counter. Tell your kids to come and get it!

You can take this a step further, making the nuts easier to digest by soaking them overnight. Pour them into a bowl of filtered water, mix in a teaspoon of sea salt and allow them to sit until morning. Turn oven on to lowest setting in the morning and rinse nuts, then pour them in a single layer onto a baking sheet and put in the oven for 12-24 hours. You'll give them a shake every couple of hours, and decide when they are at the level of crunch you desire. Once done, take out and allow to cool completely before adding to the contents of the jar.

Sample Trail Mix Cookie Jar recipe:

1 bag cashews
1 bag pecans
1 bag sunflower seeds
1 bag sesame seeds
1 bag dried craisins
1 bag of dried peaches, chop to bite sized pieces

One of the many benefits my family sees from utilizing the Trail Mix Cookie Jar is that we don't experience the blood sugar crash that comes from not eating for hours between meals or snacks. We always know this is an open option for all of us and late night snacking on unhealthy foods (or a run to the grocery store after hours...yuck!) just doesn't happen. Become a company favorite at work by making a Trail Mix Cookie Jar for your office...believe me, your fellow employees will appreciate a break from the sugar filled baked goods that show up every day!

Mexican Chicken Pizza Recipe - How to Make a Pizza at Home With a Perfect Blend of Ingredients

The ingredients in this Mexican Chicken Pizza are a perfect mixing of flavors. Feel free to add or subtract ingredients depending on what you like best, but this is a great recipe to work from. Fun and easy to make. You can use a large cookie sheet or a couple medium pizza pans to cook on.

Mexican Chicken Pizza

Homemade Cookies Recipe

Ingredients:

Frozen Bread Dough (White or Wheat) or Store Bought Pizza crust A Little Vegetable Oil Cornmeal
Refried Beans, cooked and thinned with water. BBQ Sauce, your favorite flavor from the grocery store. Jack Cheese (or any combo of Jack, Mozzarella, & Cheddar), shredded Chicken, cooked and shredded Red Bell Pepper, chopped Red Onion, chopped Black Olives, sliced Jalapeno Pepper, sliced thin, seeds removed (optional) Cilentro, chopped Salsa
Directions:

Pizza Crust: Defrost one loaf of the frozen bread dough according to directions. It seems to work best defrosting it slowly so it gets large and fluffy before you roll it out using a rolling pin. Put flour on your cutting board so the dough doesn't stick. If it is easier to purchase a premade pizza crust in your grocery store that will also work.

Grease your cookie sheet or two medium pizza pans using any kind of vegetable oil. One of my secrets to a good homemade pizza is putting some cornmeal on the pizza pan after you oil it. The cornmeal kind of acts like little ball bearings, keeping the dough from sticking to the pan, plus it adds a great flavor to any pizza.

Sauce: This will be your refried beans and BBQ sauce. Cook and crush your beans adding some water to make a thinner paste. Spread on the crust so it is a thin layer. Drizzle with your favorite BBQ sauce. A great mix!

Toppings: Spread shredded cheese on pizza to cover. Top with chicken, red bell pepper, red onion, black olives, and jalapeno pepper. Add a little more cheese on top.

Bake: 400° for about 15 minutes. Check it occasionally making sure it doesn't overcook. Cheese will be starting to bubble in center.

After baking, sprinkle the pizza with cilentro and your favorite homemade tomato salsa to add a wonderful fresh flavor.

Some pizzerias will add chopped tomatoes on top for a delectable finishing touch to their pizza, but in this case an authentic mexican salsa will finish your Mexican Chicken Pizza perfectly.

Save Time with No-Bake Cookies

Whether you don't want to heat up the kitchen or the demands of getting the kids out the door are upon you, it's nice to have a few no-bake cookie recipes on hand. We thought we would share some of our favorites with you.

Cranberry Coconut Bars

Homemade Cookies

This first recipe, Cranberry Coconut Bars, is more of a big kid cookie-it has too much fruit and too many nuts in it to suit most youngsters. But it so scrumptious and easy, we had to include it. If you are making a lunch for a spouse or a teenager, we think this will be a hit. Of course, it doesn't have to go in a lunch pail.

This is a microwave cookie that can be mixed right in the baking pan. How's that for convenience?

If you are not fond of dried cranberries, consider substituting dates, raisins, or chopped apricot pieces in this recipe.

1/2 cup butter

1/2 cup brown sugar

1 1/2 cup quick rolled oats

1/4 cup light corn syrup

1/2 cup dried cranberries

1/2 cup sweetened flaked coconut

1/2 cup walnut pieces

Directions

1. Place butter in an 8-inch square, microwave-safe baking dish. Microwave until the butter is melted.

2. Stir in the brown sugar until dissolved. Stir in the rest of the ingredients. Press the mixture firmly into the dish.

3. Microwave for three to five minutes or until lightly browned. If your microwave does not have a rotating carousel, rotate the dish twice during cooking.

4. Let the cookies cool and then cut them into bars with a sharp knife. Wrap them individually to pack in a lunch.

This recipe will make sixteen 2 x 2-inch squares.

This next recipe makes a great kid cookie. It's almost confection-like but is so packed with energy and hearty oats that you won't mind giving your youngster a few. This cookie is best with a tall glass of milk.

Chocolate Peanut Butter Drops

This is a range-top cookie. Because it is a no-baker and so full of energy, it makes a great camping cookie.

2 cups sugar

1/2 cup milk

1/4 cup butter

1/3 cocoa

2 1/2 cup quick oats

1/2 cup peanut butter

1/2 tablespoon vanilla extract

Directions

1. Combine sugar, milk, butter, and cocoa in a medium saucepan. Cook over medium heat, stirring occasionally, until the mixture comes to a boil. Cook for two more minutes stirring constantly and then remove the pan from the heat.

2. Stir in the peanut butter and vanilla, then the oats.

3. Let cool for several minutes and then drop spoonfuls onto waxed paper. Let the cookies cool completely before removing them from the waxed paper.

More No-Bakers

When thinking of no-bake cookies, don't forget the perennial favorites, Rice Krispie Treats and Frosted Graham Crackers. We're assuming everyone has the recipe for Rice Krispie Treats. Consider adding chocolate chips, dried fruit pieces, or cinnamon candies for a little pizzazz.

To make Chocolate Rice Krispie Treats, melt 2/3 cup chocolate chips (for a recipe calling for six cups of cereal) with the marshmallows and butter. This is a real favorite-our kids like these more than regular Rice Krispie Treats and they are no more difficult to make.

For Frosted Graham Crackers, simply pick your favorite frosting and sandwich that between two graham cracker squares. Pick a frosting with a powdered-sugar base that will set up firm and won't be messy.

Homemade Baby Shower Centerpieces For Your Next Baby Shower

Whether you are making homemade baby showers centerpiece for the food table or the gift table, you can easily come up and create you own masterpiece. Creativity goes a long way and saves a lot of money! When you begin brainstorming centerpiece ideas, revert back to your overall theme. If the mommy-to-be is having a boy and you have a shower that focuses on all the different sports, then maybe you could have a toy wagon or Tonka truck full of toddler sport equipment. If it is a beautiful baby girl that is expected them you could Care Bears in Diapers as their pastel colors would be perfect.

For the food table, your centerpiece should be your cake, or a diaper cake. A diaper cake is a non-edible creative "cake" made of diapers with baby shower gifts attached to it. You can place it in a cake dish if you would like for an added effect. The diaper cake would look just as great on the gift table and can serve as both a gift and a centerpiece. You could also place miniature pacifiers, bottles, or carriages, (found at your local Dollar Tree), around the food table. Another cute idea for the food table include a basket lined with a clean baby receiving blanket and filled with cookies. For the final touch to the "cookie basket" add a bottle filled with pastel colored m&m's! If your theme involves rubber ducks, why not add a baby bathtub filled with punch to your food table with floating rubber ducks.

Homemade Cookies

For the centerpiece of the guest's tables, you could use: Candles shaped like baby bottles Remove the nipple from baby bottles and use the base as a vase; insert fresh or artificial flowers Remove the nipple from the baby bottle and insert candy Styrofoam Baby Bootie Cups - these are adorable baby booties made from styrofoam cups that you can insert mints, jelly beans, etc. in. Alphabet Blocks

The gift table could easily go without a centerpiece for an inexpensive baby shower as it is likely to be bright and colorful with all the wrapped gifts. As stated earlier, the diaper cake would be perfect. Other great ideas include: Diaper wreath - this could also be hung on the delivery room door Balloons - by themselves or attached to a diaper stuffed animal or floral arrangement Floral arrangement

Vegetable Cookies For Children

My grandbaby is a tiny minuscule toddler, and she does not eat well. I told her mommy, that I used to make vegetable cookies for her when she was little, to get her to take in nutrition. Thus, my daughter is feeding her daughter vegetable cookies now for nutrition.

The understanding is so simple. Just use your popular cookie method and add 1 can of mixed vegetables, drained, to it and you have vegetable cookies. The kids love them!

Cookies

You can even puree the veggies if you like and add them to the recipe. Someone else suggestion is add only ground up or pureed carrots to the recipe.

I would cut back on the sugar to make them more nutritious. You can add raisins or blueberries to make it super nutritious.

Can you just fantasize the relief you will have knowing that your toddler or child is eating something for a snack as nutritious as a vegetable cookie?

You can serve them with every meal they are so nutritious.

For a sweet treat, just add some butterscotch or chocolate morsels to the mixture and your cookies become sweet dillyitious!

In some recipes you may want to use less oil if the veggies are pureed.

You can use sugar cookie or oatmeal cookie recipes. You can also make muffins and add vegetables. All you need is imagination to take you added with this food aspect in mind.

Sit back and enjoy watching your child eat and grow with these vegetable cookie treats.

Pass this on to your friends and family with minuscule ones. They will love your for it!

Decorating Designer Cookies

When it comes to decorating designer cookies, there are three techniques that used; decorating the cookie with royal icing, color flow, and fondant. Using these three techniques will produce the professional designer cookie look that you are after.

The first technique is to use royal icing to decorate the cookie. Using a basic royal icing recipe, a decorating bag and tip, you can decorate your cookie any way you like. Most often tip #1 is used for fine outlining the cookie and decorating the details. You can also use other decorating tips like the star tips #16 and #21 to achieve zig zags and interesting borders.

Homemade Cookies

The second technique is the color flow method. This is a method made popular by Wilton Cake Decorating. To make the color flow icing, combine:

1 pound of confectioners sugar

2 tablespoons of Wilton Color Flow Mix

1/4 plus 1 teaspoon of water

Blend on low speed for seven minutes.

This color flow icing will be stiff. Using a small piping tip (#1 or #2) outline your cookie. After the outline of the cookie has "set" or hardened, you need to "flood" the cookie with the thinned icing. To thin your color flow icing, add a few drops of water at a time until it is a thinner consistency that will run.

Now take your thinned icing and pipe it into the center area of your cookie. The icing will spread and fill in your cookie area. After the color flow has set, you can add more detail to your cookie with more of the thicker color flow icing or the royal icing.

The third technique for decorating designer cookies is using fondant. Many people are "afraid" to try fondant but it is actually very easy. You first need to tint the fondant the color that you need for your cookie and then roll it out to approximately 1/18" thick. Using the same cookie cutter that you used to cut out the cookie, cut the same shape out of your fondant.

Next, lightly moisten the back of the fondant shape with water - not too much or you will make the fondant "soggy". Lay the fondant shape on your cookie and lightly press down, shape, and smooth the edges with your fingers. After you have the fondant on the cookie, you can decorate it giving it details with the royal icing or the full-strength color flow icing.

Using these tips and techniques, you will be making professional designer cookies for your friends and family in no time!
