3 large tart apples, peeled and coarsely chopped

1/4 cup sugar

1/4 cup water

3/4 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

12 shortbread cookies, crushed

2 cups vanilla ice cream

Whipped cream

Directions

In a large saucepan, join the apples, sugar, water, cinnamon and nutmeg. Bring all to a boil. Sacrifice heat; cover and simmer for 10 minutes or until the apples are nice and tender.

Set up four goblets or parfait glasses.

In each goblet, layer one tablespoon of cookie crumbs, 1/2 cup ice cream and 1/4 of the apple mixture. Top each sweetmeat off with the remaining cookie crumbs and a large dollop of whipped cream. Embellishment with an apple slice, if desired.
