1/2 cup butter, softened 3/4 cup sugar 1 egg 1 1/4 cup all purpose flour 1/2 teaspoon baking soda 1/2 teaspoon salt 1/2 teaspoon ground cinnamon 2 1/2 cups pitted dates, chopped 1/2 cup each candied cherries and pineapple, chopped 3/4 cup Brazil nuts, coarsely chopped and toasted 3/4 cup almonds, chopped and toasted Directions Preheat oven to 375 degrees. Prepare baking sheets with nonstick cooking spray. In a bowl, cream together butter and sugar. Add in the egg; mix well. In another bowl, combine the flour, baking soda, salt and cinnamon; gradually add to the creamed mixture and mix well. Fold in the fruits and nuts. Drop by teaspoonfuls 2-inches apart onto prepared baking sheets. Bake for 8 to 10 minutes, or until lightly browned. Let cool completely. In a bowl, combine flour, sugar, cinnamon, baking soda and salt. Add in the pumpkin, oil, eggs, milk and vanilla; beat on medium speed until well mixed. Stir in the chocolate chips and nuts. Drop by tablespoonfuls onto prepared baking sheets. Bake for 13 to 14 minutes, or until edges begin to brown. Cool completely. Makes 84 cookies. |
